#51 Easy Beef Lasagna
Readers, I am starting a new category called "20 min to oven". As much as I love to cook, there are times, especially weeknights, where I want a quick and easy main. I don't need the whole thing to be done in under 30 mins, but if I'm done preparing it and it's gone to the oven, THAT is what matters.
20 mins to oven means that I can get the whole thing done and it's in the oven, in 20 minutes or less. If it cooks 30 min to 1 hr, that's fine. These will all be main dishes that all you would need to do is throw a salad or some cooked veggies with it, and you've got dinner done. I'm also looking for leftover-friendly recipes that can be taken to work for lunch the next day. Some of these recipes will use canned or jarred ingredients.

Easy Lasagne

Easy Lasagne
Ingredients
- 1 lb. ground beef
- 1 28 oz jar Pasta Sauce
- 12 ounces cottage cheese
- 2 1/2 C grated Mozarella cheese
- 1 egg
- 9 lasagna noodles (I used the kind you don't need to precook. If using smaller noodles, you may need more than 9)
- Preheat oven to 350 degrees F (175 degrees C). Cook meat in a large fry pan. When done, add the jar of pasta sauce and heat through, on low for about 5-7 mins.
- Meanwhile, mix 2 cups of the mozzarella, the cottage cheese and egg together in a small bowl.
- Spread 1 cup of sauce in the bottom of a 9x13 inch baking dish. Cover sauce with 3 noodles, or enough to cover the bottom of the pan, one layer. Cover noodles with 1/3 of sauce. Spread 1/2 of the cheese mixture on top of sauce. Place another layer of noodles and one of sauce over the mozzarella; top that with remainder of the cottage cheese mixture. Top with remaining 3 noodles and remaining sauce.
- Bake in preheated oven 30 minutes. Sprinkle remaining 1/2C mozzarella on top and bake 15 minutes more, until golden and bubbly. Serves 12.
Taste: 5/5. I was surprised at how good it was without bechamel and homemade sauce.
Leftoverability: 5/5 I'm having it for lunch now, as I type this. Fantastic.
Brit-rating: Refused to taste it. "You know I don't like pasta."
Serve to guests: If it was casual company on a weeknight, yes. Otherwise I would make a lasagna from scratch (sauce and bechamel).
This is a keeper!






We all need 20 min meal on weekend. Sometimes things like pre cooked lasagna sheets really make life easy!

I have even made my lasagna with the regular noodles and not precooked those *gasp* It actually turned out well. You may want to try it sometime just to see.
