#49 Outback Grilled Shrimp on the Barbie, Sirloin Steak, #50 Potato Skins and onion rings



Shrimp (Outback Steakhouse copycat recipe)

lemon juice for squeezing
1/2 teaspoon salt
1/4 garlic powder
1/4 teaspoon onion powder 
1/4 teaspoon ground black pepper
1/4 teaspoon chili powder
1/4 teaspoon granulated sugar
1/8 teaspoon cayenne pepper
dash allspice

melted butter for brushing
1 lb King Prawn Shrimp (about 20)
parsley for sprinkling

  • Remove the shell from the shrimp. Keep the last segment of the shell and the tail. Remove the black vein that runs down the back of the shrimp. Stick a skewer through the middle of each shrimp. Push them together on the skewer so that they are "spooning" each other.
  • Squeeze some fresh lemon juice over the cuddling shrimp.
  • Brush melted butter generously over the top of the shrimp.
  • Sprinkle a bit of the seasoning on next. Don't use a heavy coating of seasoning.
  • Place the shrimp onto your hot grill with the seasoning side down. Brush some more melted butter over the other side of the shrimp, followed by another light sprinkle of seasoning.
  • After 3 minutes or so the face down side of the shrimp should be browned and showing some light charring. Flip the shrimp over and grill for an additional 2 to 3 minutes or until browned on the other side
  • ***I oven broiled the shrimp for about 2 mins on each side, following the above directions.***

    Sauce:
    1/4 C each sour cream, mayonnaise
    chili sauce to taste

    Steak
    I made my own marinade of olive oil, salt, pepper, basil, lemon juice and garlic.

    Potato Skins (Serves 2)
    2 potatoes, scrubbed
    2 strips of bacon, cooked and crumbled
    1 green onion, chopped
    1/4 C shredded medium cheddar cheese

    Bake potatoes in microwave for about 7 min or until the fork goes through them.  Let cool for a couple of minutes.  Slice horizontally and scoop out flesh, until you have about 1/4" potato left in the skin.  Cover each potato, both sides, with olive oil.  Place in a pan, in 450 degree oven for 10 mins.  Turn over and bake another 10 mins, until skins are browning and crispy.  Remove from oven and add cheese.  Put back in oven and turn to broil on 350 until cheese melts (about 3-5 mins).  Remove and add crumbled bacon and green onion atop each piece.

    Taste: Shrimp 5/5, Sauce 4/5 (added a bit too much chili sauce)  Steak 3/5 (cooked in too much butter--my bad)  Potato skins 5/5 Out of this world good!  Onion rings 5/5

    Brit-rating:  Shrimp GREATed it. "These are really nice".  Sauce HATEd it "Too overpowering."  Steak neutral  "A bit too greasy but otherwise okay." and Potato skins GREATed it. "Is this all we have?"  Onion rings GREATed them.  So good, they left him speechless.

    Serve to guests:  Everything apart from cooking the steak differently and no sauce.  The shrimp were tasty on their own--didn't really need the sauce anyway, in my opinion.    This was a LOT of food at one sitting, so I would probably serve a combination of any of these 4, or just one with some other dishes.

    I couldn't believe how easy the potato skins were to make and very inexpensive.  A plate of these & the onion rings would make a game day snack.  i would  make everything again except the sauce.  The whole meal, start to finish, took me about an hour to prepare but the whole thing was a fraction of a similar meal in a restaurant.
