#30 Peppermint Fridge Tart
This is a South African dessert recipe given to me by a colleague. It is *incredible* and the pic does not do the justice the tastebuds would. ( what I think would be close American ingredient substitutions in italics).

Peppermint Fridge Tart
500ml whipping cream (2C whipping cream or 1 packet dream whip made up)
1 pkg Tennis biscuits (Pecan Sandies)
1 small can sweetened condensed milk, caramel
2 Nestle Mint chocolate bars (Hershey mint or Kit Kat mint would work)
Layer bottom of pan with biscuits. Using an electric mixer, whip the cream until peaks are formed. This will be about 3-5 minutes. Gently fold in the can of sweetened condensed milk (original recipe called for carmelizing the milk on low heat for 1-2 hrs, but I didn't realize this, and stirred it in, uncarmelized). Grate one chocolate bar into the whipped cream mixture. Spread over the biscuits. Grate the 2nd bar over the top and let chill for at least 2 hours.
Taste: 5/5 You can't go wrong with this for either a light summer dessert or a pretty Christmas one. A real year-rounder
Serve to guests: Has made it to my top 5 list. I think you could even add a little food coloring for Valentine's Day, etc...
Brit-rating: "not keen on mint, but this is quite nice"
Leftoverability: If there are any, because it is a chilled dessert, I think it would be fine the next day.

Very tasty and so versatile. You can use any kind of cookie and any kind of candy and it tastes awesome!!
