#18, 19 20 April's Restaurant-like meal Challenge-- Tex-Mex Burgers with Cajun mayo, Oven Potato Wedges and Lettuce Wedge


Could I make a restaurant-like meal at home that tastes just as good and 1/3 the price? Yes!!
Tex-Mex Burger with Cajun Mayo
Ingredients
1/2 cup mayonnaise
1 teaspoon Cajun seasoning
1 1/3 pounds ground beef sirloin
1 jalapeno pepper, seeded and chopped
1/2 cup diced white onion
1 clove garlic, minced
1 tablespoon Cajun seasoning
1 teaspoon Worcestershire sauce
4 hamburger buns, split
Preheat grill for medium-high heat. In a small bowl, mix together the mayonnaise and 1 teaspoon of Cajun seasoning. Set aside. If not grilling, set your pan to medium-high.
In a large bowl, mix together the ground sirloin, jalapeno pepper, onion, garlic, 1 tablespoon Cajun seasoning, and Worcestershire sauce using your hands. Divide into 4 balls, and flatten into patties.
Lightly oil the grilling surface, and place the patties on the grill. Cook for about 5 minutes per side, or until well done. If cooking stove top, follow the same instructions, adding about 2 tsp oil to the pan. Once cooked, put the burgers on the buns and add a dollop of the cajun mayo. Top with any other toppings you wish!
Oven Potato Wedges
2 lbs potatoes cut into small wedges
1 large onion, chopped
3 tablespoons olive or vegetable oil
1 teaspoon garlic powder
1/2 teaspoon salt
1/2 teaspoon dried oregano
In a large bowl, combine all ingredients; stir to coat. Place in a single layer in an ungreased shallow baking pan.
Bake, uncovered, at 425 degrees for 30-35 minutes or until the potatoes are tender and lightly browned.
Lonestar Signature Lettuce Wedge Copycat
Dressing:
3/4 C mayonnaise
1/2 C buttermilk (or 1/2 cup of milk with 1 tsp vinegar)
1/2 C crumbled blue cheese, divided into 2 1/4C servings
1/4 tsp each garlic powder, black pepper
1/8 tsp each salt, onion powder
1 head lettuce
1 tomato, chopped
Mix all dressing ingredients together, reserving 1/4C crumbled blue cheese. Wash lettuce and cut in half, then half again, making 4 wedges. Place on plate and top with dressing, some chopped tomato and reserved blue cheese crumbles.
**You can skip the dressing ingredients and top with any dressing of your choice, if you don't like blue cheese**
Taste: 5/5 I won't make a homemade burger any other way than adding the onion, jalapeno, garlic and worcestershire sauce.
Ease of preparation: 5/5 This didn't even take me more than about 15 minutes to do the burgers and salad while the oven fries were cooking.
Brit-rating: Loved the fries, wanted nothing to do with the wedge and his comment on the burger "It's not too hot for having jalapenos in it".
Serve to guests: A great meal for a backyard picnic table. Your guests will think they're at Lonestar.






OMG!!!!! You had me at the potato wedges! This looks and sounds FABULOUS!! This I can't wait to try...DROOLISHIOUS - yummy.
