#17 Layered Fiesta Casserole

If you're looking for something zesty for dinner that makes a great leftover lunch, mexican foodies will like this one.


Layered Fiesta Casserole


1 pound extra-lean ground beef
1 green bell pepper, chopped
1 red bell pepper, chopped
2 cups salsa
1 19oz can diced tomatoes
1 package 12 (6 inch) tortillas
2 cups shredded, cheddar cheese

Directions
  1. Heat oven to 375 degrees F.
  2. Brown meat with peppers in large skillet; drain. Return meat mixture to skillet. Stir in salsa, tomatoes and corn.
  3. Spread 1 cup meat mixture onto bottom of 13x9-inch baking dish; top with 6 tortillas, overlapping as necessary to fit. Cover with layers of half each of the remaining meat mixture and cheese; top with remaining tortillas and meat mixture. Cover with foil.
  4. Bake 25 to 30 minutes or until heated through. Top with remaining cheese; let stand, covered, 5 minutes or until melted.
