#13 Orange Dream Cake

Ingredients
2/3 cup (150g) butter or margarine, softened
1 1/3 cups (265g) sugar
2/3 cup (160ml) fresh orange juice
3 tablespoons (45ml) fresh lemon juice
1 teaspoon (2g) grated orange peel
1 teaspoon (2g) grated lemon peel
2 eggs
2 cups (285g) cake flour
2 teaspoons (9g) baking powder
1 teaspoon (6g) salt
Frosting:
1 box powdered (icing) sugar
2 TBSP (12g) butter or margarine, softened
3 TBSP+ (45ml) orange juice
Flaked coconut
Cake directions:
In a large mixing bowl, cream butter and sugar. Add juicesand peel; mix well (mixture may appear curdled). Add eggs, one at a time,beating well after each addition. Sift flour with baking powder and salt; addto creamed mixture and mix well. Pour into two greased and floured 8-inch cakepans or one 9X13 pan. Bake at 375 degreesF (190C) for 25 to 30 minutes or untilcake tests done. Cool in pan 10 minutes before removing to a wire rack to coolcompletely.
Frosting place butter and icing sugar in a large mixingbowl. Add 3 TBSP orange juice. Mix well.Add more juice very slowly if needed.You want the icing to be the of a thicker consistency rather than thin. Ice cake and top with flaked coconut.
