#9 Lemon Drizzle Cake

This was a spongy, golden bit of lemony heaven.
Lemon Drizzle Cake
2 small lemons
275g granulated sugar
175g butter or margarine, softened
200g self-raising flour
1/2 tsp baking powder
3 large eggs
Preheat oven to 350F (180C). Spray a 2lb loaf pan with non-stick spray, or grease and flour. Finely grate the zest of the lemons. Mix 175g of sugar with lemon zest and butter. Add flour, eggs and baking powder. Spoon cake batter in pan and bake for 35 min or until well-risen and golden brown. Remove and let cool for 5 mins.
Squeeze one of the lemons for about 3 TBSP of lemon juice. Mix with the remaining 100g sugar. Turn cake onto wire rack and make about 50 holes on the top of the cake with a skewer. Slowly spoon over half of the lemon sugar mixture. Leave to stand for 5 min. Turn upside round and glaze the top with the remaining lemon sugar. Leave to stand for 1hr.

Serve to guests: 5/5 This would be great for anything from a brunch to a light dessert with a little whipped cream or ice cream.






WOW you recipes are so darn easy and, more important, they use regular old stuff we have in the house already. No running around town looking for exotic fare!!! I LOVE it!
