Brown Sugar Meatloaf

Ingredients

  • 1/2 cup (110g) packed brown sugar
  • 1/2  cup (120ml) ketchup
  • 1 1/2 pounds (680g) lean ground beef
  • 3/4  cup (180ml) milk
  • 2 eggs
  • 1 1/2  teaspoons (9g) salt
  • 1/4  teaspoon (.5g) ground black pepper
  • 1 small onion, chopped
  • 1/4 (.5g) teaspoon ground ginger
  • 3/4 cup (50g) bread crumbs or crushed saltines

Directions

  1. Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 5x9 inch loaf pan.
  2. Press the brown sugar in the bottom of the prepared loaf pan and spread the ketchup over the sugar.
  3. In a mixing bowl, mix thoroughly all remaining ingredients and shape into a loaf. Place on top of the ketchup.
  4. Bake in preheated oven for 1 hour or until juices are clear.

Taste:  5/5 the best meatloaf recipe I've found
Ease of preparation:  5/5
Serve to guests: likely not, as I wouldn't choose meatloaf as a guest recipe; however, taste-wise, this one may change my mind
Brit rating: Hated it.  "I'm not keen on mince". 
Changes:  I added finely chopped green onion as well.  I also didn't have quite 1 1/2 lbs of meat, which is why it slightly fell apart when I got it from the pan.  The taste made it well worth it, though!
